Born in Georgia, Giorgi Gakhokidze embarked on his footballing journey with Metallurg Rustavi. His talent caught the attention of giants Dinamo Tbilisi, who invited him for a season. However, he did not feature for the first team and moved on to Kolheti-1913.

In 1997, Gakhokidze sought new challenges in Russia, joining Alania. After two seasons, he was acquired by Dutch giants PSV Eindhoven in 1998. However, his time there was unsuccessful. In 1999, he was loaned to Maccabi Haifa in Israel, returning to PSV the following season.
