Interestingly, before becoming a professional poker player, Joe worked as a manual therapist for 13 years. However, a rare and serious condition affecting the blood vessels in his hands forced him to give up his practice. It was during this time that Joe discovered his passion for poker. Although poker had been a longtime hobby for him, it wasn't until the year 2000 that he participated in his first live tournament in Melbourne. Subsequently, Joe began actively participating in Australian tournaments, but it wasn't until 2005 that he ventured to Las Vegas, Nevada, to compete in the renowned World Series of Poker (WSOP).

Joe's debut at the WSOP proved to be highly successful. In the same year, he celebrated a major victory by surpassing 5,000 opponents to win the Main Event of the World Series of Poker. Notably, Joe became the first Australian to win such an event. After his triumph, it is said that Joe wrapped himself in an Australian flag, jumped, and shouted, "Thank you, America!"
