Biography of Pierre Herme

Pierre Herme, a French pastry chef, is the worthy successor of four generations of Alsatian bakers and pastry chefs. He began studying the craft of pastry at the age of 14 and became the talented apprentice of the king of French pastry, Gaston Lenotre. By the age of 20, he had already been appointed as the head pastry chef of the renowned "Fauchon" grocery store.

Opening His Own Maison

In 1996, Herme left "Fauchon" to open his own Maison, Pierre Herme Paris, together with his partner, Charles Znaty. Their first boutique opened in Tokyo in 1998, followed by a cafe-patisserie in 2000. In 2001, Herme made a comeback to the French culinary scene with his boutique located on Bonaparte Street, which quickly gained popularity. By the end of 2004, he opened a second boutique with a modern design on Vaugirard Street. Along with it, the "Atelier" was also established in partnership with the prestigious culinary school Ferrandi and the Paris Chamber of Commerce, where young chefs are trained in the art of pastry.

In early 2005, Tokyo witnessed a new concept from Pierre Herme Paris - a luxury supermarket and Chocolate Bar. These two spaces were located in the Omotesando district, where renowned Fashion Houses had claimed their place. Finally, a new boutique opened in the world's largest gourmet mall, Isetan Shinjuku, in 2006. Today, Pierre Herme's name is associated with the highest level of artistry in the world of pastry. Many consider him to be the best pastry chef in the world. Vogue magazine has called him the "Picasso of pastry", Food&Wine has bestowed him with the title of "Provocateur Pastry Chef", Paris-Match refers to him as the "Avant-Garde and Wizard of Tastes Pastry Chef", and the New York Times has dubbed him the "Emperor of Cuisine". Gourmets pronounce his name with respect and admiration.
