William Lamberti: Russian Culinary Pioneer

Early Life and Education

William Lamberti was born on February 11, 1971, in Tannhausen, Germany, to Italian parents temporarily working there. He holds both Italian and Russian citizenship. His mother, from Sicily, was a social worker specializing in children with developmental disabilities. His father served in the police, tax inspectorate, and later on a navy ship. William has a younger brother who works in a major food corporation.

Lamberti's passion for cooking began at a young age. He pursued his culinary education at the Istituto Professionale Alberghiero "A. Panzini" in Senigallia, Italy, graduating in 1990.

Culinary Career in Italy and Abroad

Lamberti's culinary journey commenced in 1990 at Novotel Milano Est, where he spent 12 years honing his skills. In 1994, he secured a position at the three-Michelin-starred "L'Albereta" with Chef Gualtiero Marchesi and later at the Grand Hotel "Quisisana" (also three Michelin stars).

He continued his Michelin-starred experience at Enoteca Pinchiorri (Florence), Lucas Carton (Paris), and Halkin (London), the first Italian restaurant in London to receive a Michelin star. In 1998, he joined the team at "TECA" in London.

Work in Moscow

In 1996, Lamberti relocated to Moscow and began his Russian chapter at the "El Dorado" restaurant, led by three-Michelin-starred chef Gualtiero Marchesi. He provided consulting services at El Dorado before embarking on collaborations with Arkady Novikov.

Lamberti became head chef at "Piramida" and assisted in setting up the kitchen at "Grand-Opera." In 2004, he welcomed Alain Ducasse (three Michelin stars) to Moscow's "Biscuit" restaurant for a culinary showcase.

Brand-Chef and Restaurants

From 2008 to 2010, Lamberti held the position of brand-chef at "Azbuka Vkusa." Since 2009, he has been a brand-chef at the Ginza Project restaurants.

In 2011, he co-founded his first Moscow restaurant, "Uilliam's," with Ginza Project. The restaurant remains a joint venture to this day.

Lamberti has collaborated with several acclaimed chefs, including Glen Ballis and Alexander Oganezow, to open restaurants such as Zupperia, Honest U.L., Ugolek, GlenUill, Pinch, AVIV, and Salumeria.

Television and Publications

Lamberti has shared his culinary knowledge and passion through television appearances in the "History of Russian Cuisine" program on Channel One and the film "Kitchen. The Last Battle" (2017).

He has also authored a cookbook, "Uilliam Lamberti Café "Galleria"," highlighting the restaurant's cuisine and recipes.

Patents and Innovation

While working at "Galleria," Lamberti met Andrei Ivanovich Nesterov, who introduced him to Professor Georgi Georgievich Dubtsov of the Moscow State University of Food Production. Together, they patented a technology for vacuum pasteurization of food products in 2007.

Personal Life

William Lamberti is married to Olga Lamberti and has four children.
