The Anti-Diet Experiment: One Woman's Pasta-Only Journey
Embracing the 'Pasta Diet'In January 2018, Brooklyn-based food blogger and author Charlotte Palermino embarked on a culinary experiment that defied conventional dietary wisdom. Driven by her love for pasta and skepticism towards its alleged villainous role in many diets, Palermino set out to prove or disprove the theory that "gluten, carbs, and dairy clog our systems."

Ground Rules and Pasta Explorations
As with any elimination diet, Palermino established guidelines, including no snacking, no alcohol, no caffeine, no calorie counting, and no indulging in non-pasta treats. Her pasta-packed menu included dishes such as orecchiette with kale pesto and yogurt for breakfast, spaghetti and meatballs at Manhattan's Spaghetti Incident, and a dinner of pasta at Midtown's Scampi.

Surprising Energy and Physicality
Despite initial discomfort from caffeine withdrawal, Palermino experienced unexpected bursts of energy. She extended her usual gym routine with a 60-minute treadmill session and felt inspired by the words of an Italian cafe owner who emphasized the nourishing power of food.

Challenges and Cravings
While her energy levels soared, Palermino faced comments that she looked fatigued. On day 4, the temptation for coffee proved too strong, leading to three cups. She later indulged in cacio e pepe pasta and raved about her ravioli at Williamsburg's Lilia's.

Fatigue and Dehydration Set In
Day 5 brought forth severe dehydration and a lackluster pasta breakfast. Palermino attempted shakshuka-style pasta in the microwave at work, but it failed to satisfy.

Renewed Energy and Socializing
The return of pasta brought back Palermino's energy, and she even opted for a run. She dined at Carbone with a friend, enjoying rigatoni with clams. Despite consuming ample fluids, her thirst persisted.
Vitality and Healthy Complexion
A colleague photographer noticed Palermino's glowing skin at Maialino, where she sampled bucatini all'amatriciana. She found herself completing double workouts and feeling like a "gym warrior."
Pasta Extravaganza and Vegetable Longings
With a friend at Lil' Frankie's, Palermino treated herself to three pasta dishes, including penne with tomato sauce and spinach and gorgonzola pasta. However, she realized she missed vegetables and craved red wine.
Craving the Variety
Palermino's final breakfast of linguine with butter, garlic, basil, and lemon left her craving more. She visited Un Posto Italiano for a box of chitarra pasta, which she enjoyed smoking.
Ten Plates of Pasta and Goodbye Pasta
At Williamsburg's Barano, Palermino and her friends devoured ten plates of pasta, including gigli with calabrian honey, pecorino, and black pepper. Despite the deliciousness, she longed for a non-pasta meal.
Ending on a Light Note
Her final dinner at Osteria Morini featured egg yolk ravioli with bolognese ragu, followed by lunch at Rucola. As the "pasta diet" ended near midnight, she indulged in four amaretti cookies.
Dietitian's Advice and Weight Loss
Consulting with a dietitian revealed that consuming a single food group for an extended period is generally ill-advised. However, Palermino shed 2.2 kilograms by eliminating snacking and alcohol.
Embracing Intuitive Eating
Palermino encourages people to prioritize how they feel after eating rather than relying solely on social media advice. She advocates for stepping away from the screen, enjoying outdoor activities, and indulging in pasta when desired.
Past Pizza Experiment
In October 2015, Palermino embarked on a similar pizza-only week, losing 2 kilograms. Dietitians attributed her weight loss to the reduction in wine and sugar consumption.
The Importance of Balance
Palermino cautions against extended pizza diets, emphasizing the unsustainable nature of such restrictive regimens. She describes pizza without wine as an "ordeal" she does not intend to repeat.
